When we came to Amsterdam to open Little Plant Pantry two and a half years ago, we envisioned it as a research platform. Our inspiration for the shop came from curiosity and desire to learn more about something as fundamental as the food we eat.
.
Thanks to Stefanie @wegozero.co and her amazing ability to oversee projects from start to finish and always stay positive, we got a chance to interview food producers who create natural products and stay away from big industry. We've been learning from farmers and food makers about the agricultural and production cycles revolving around the soil and sustaining our livelihoods. 
.
Today, we are publishing our first webinar in the Health Food Talks webinar series, which Stefanie conducted with the founders of @unettaro , Christina and Federico. They are the people behind the amazing artisan pasta that we are privileged to sell in our shop. 
.
Christina and Federico talked to us about the enormous difference between industrially produced pasta and artisanal pasta, about the nutrition necessary to sustain our bodies and about the possibility of doing something big on a small piece of abandoned land. In a world governed by corporations, micro-farms provide a unique perspective on food production practices. Christina and Federico show us what it takes to turn wheat into pasta while regenerating the soil.

Stefanie is a zero-waste consultant who has been advising us and working behind the scenes at Little Plant Pantry for some time now and without whom this webinar series would not have happened. She has been the main force behind this amazing project and today we finally get a chance to interview her about what she does and why she does it.

⏰ Revised Opening Hours, January 24th 🌱 In r ⏰ Revised Opening Hours, January 24th 🌱

In response to the most recent announcements by the government and the introduction of the curfew, we are slightly modifying our opening hours.
.
As of January 24th, the shop is open Tuesday to Sunday from 11am to 6pm. We open an hour earlier and close an hour earlier to ensure that we can clean up in time. As before, the shop is closed on Mondays.
.
If you would like to visit the shop during quieter periods, please plan your visit on Tuesdays, Wednesdays or Thursdays. Please feel free to call us if you would like to confirm whether the shop is busy or quiet on a particular day. As some of you may have noticed, we have started doing deliveries in Amsterdam. We are still adding products to our digital library but we are mostly there. You can organize a delivery to your home in Amsterdam on our website.

This project has been in the works for a long time and today we are finally launching our crowdfunding campaign: https://www.indiegogo.com/projects/little-plant-pantry-circular-grocery-store/x/25094032#/.
.
Since early 2019, we've sold a variety of plant-based organic products in our store but we now want to go further with our mission to develop a waste free delivery service. With your help, we will buy an industrial compost machine and implement a system for taking back and composting all food and packaging waste produced by our sales. We will compost this waste onsite and give nutritious compost to local farms we collaborate with. They can use it as fertiliser or simply to improve the quality of their soil, so they can continue producing healthy organic food. 
.
We call this system the Circular Grocery Shopping Model and Little Plant Pantry will be the first store to implement and test it. But for this to be successful, the active participation of all actors in the supply chain is needed, including the community we serve.
.
The compost machine will allow us to convert the waste of 100 households into 700 liters of stabilized, ready-to-use organic compost every week but it also provides us with the opportunity to make a serious contribution to the city by preventing not only our own food and packaging waste from ending up in landfill or incineration but also the waste of our customers and the community. 
.
Having this machine closes the loop in our circular grocery shopping model and brings us closer to our ultimate goal of creating an urban zero-waste ecosystem.
