Production Process
Organic agave syrup is made primarily from the blue agave or agave salmiana plants grown in Mexico. Farmers use organic cultivation methods, avoiding synthetic pesticides, herbicides, or fertilizers.
Agave plants are harvested when mature, typically after 7–10 years of growth. The leaves are trimmed away to expose the core, called the "piña," which contains the sugary sap used to make the syrup.
The piña is cut into smaller pieces and crushed to extract the natural sap, known as "aguamiel" which is rich in fructans, which are sugars stored by the plant. Then, it is filtered to remove impurities and heated at low temperatures or treated with enzymes to break down complex fructans into simpler sugars like fructose and glucose. This process ensures the syrup remains raw or minimally processed, depending on the desired product type. The liquid is then gently heated to concentrate it into a thick syrup. The temperature is carefully monitored to preserve the organic integrity and natural flavor.
