How to use Arrowroot powder can be substituted for cornstarch or flour. For cornflour substitution, replace 1 tablespoon of cornstarch with 2 teaspoons of arrowroot powder. To replace flour thickeners, use 1 teaspoon of arrowroot powder for every one tablespoon of flour. Be sure to make a slurry before cooking with it. Mix your arrowroot powder with a little bit of cold water (creating a slurry) before adding it to your recipe.
Production process Arrowroot Powder is obtained from Arrowroots Tubers; Arrowroot tubers contain about 23% starch. They are washed, cleaned, washed again, drained and finally reduced to a pulp by beating them in mortars or subjecting them to the action of the wheel-rasp. The milky liquid thus obtained is passed through a coarse cloth or hair sieve and the pure starch, which is insoluble, is allowed to settle at the bottom. The wet starch is dried in the sun or in a drying house. The result is a powder, the "arrowroot."
