Organic rye grain has a fresh, rich, earthy flavour and aroma. The main bread flour of Northern and Eastern Europe, rye has been popular for ages as a food that satisfies and fuels the body. Rye grain, also referred to as rye berries, is a grain that typically thrives in cold and wet climates. It used to be one of the only options when it came to baking bread in Northern Europe. Nowadays, rye is a popular grain used in Scandinavian and Northern cuisine. As an added benefit, the grain is also good for the environment. It can be used to capture nutrients, fight soil erosion, combat weeds and add to the soil’s overall health. Rye can also cover crops in the winter and is frequently used in organic farming.

Research shows that consuming whole grain rye has many health benefits, including improved bowel health, better blood sugar control and reduced risk of type 2 diabetes. Rye has a lower glycemic index than other grains. High in soluble fibre, it helps manage digestion and absorbs carbs and sugars, resulting in a more gradual rise in blood sugar levels. Rye bread is also rich in zinc, magnesium, calcium and other micronutrients.  It is important to note that rye grain is not suitable for those who follow a gluten-free diet.

Organic rye grain is a great alternative when baking bread, as it is healthier than grains used to make regular white breads and wheat breads. It is often used in Nordic recipes and is either fried to make crisp crackers or used for øllebrød, a Scandinavian breakfast porridge. Rye can also be used as a starter for sourdough bread.

How to Use
Rye can be ground to make bread, but the whole grain can also be added to salads, or serve as a base for grain bowls. To make a grain bowl, add 3 cups of water to a pot, a pinch of salt and bring to a boil. Add 1 cup of rye berries, reduce to a simmer and cook for 50-60 minutes. Rye berries can also be soaked overnight to reduce cooking time. Drain any excess water and serve with your favourite vegetables, herbs, spices and nuts or seeds to top it off.
