Our organic ground cinnamon from Ceylon has a deep aroma, amplifying its sweet and spicy taste. Cinnamon is extracted from the inner bark of cinnamon trees and, according to some studies, is rich in anti-inflammatory properties. Organic cinnamon from Ceylon is the best quality and is distinguished from cassia cinnamon. The main difference between Ceylon cinnamon and cassia (Cinnamomum cassia) is the content of coumarin. Organic cassia contains approximately 2 to 5 grams of coumarin, whereas organic Ceylon cinnamon contains only approximately 0.015 grams coumarin. The true organic Ceylon cinnamon is softer and has a slightly more complex and mild flavor than cassia. The deep, rich flavor of cassia works well in savory dishes, while the finer organic Ceylon cinnamon is commonly used for sweet desserts.
