Coconut flakes are a versatile ingredient, excellent in both savoury and sweet dishes. A great source of dietary fibre, desiccated coconut contains 10g per half-cup serving, more than wheat and bran.
How to Use
Coconut flakes can be used to top açai bowls or breakfast cereals. They can also be used to make no-bake chocolate coconut 'energy' balls. Place 1 cup raw almonds into a food processor and blend on high until the nuts become a fine almond meal. Add 15 pitted (Medjool) dates, 1/2 cup unsweetened cocoa powder, 1/3 cup unsweetened coconut flakes (or shredded coconut), 1 tsp vanilla, and 1/4 cup mini chocolate chips, and blend on high. Scoop a big tablespoon of the dough into your hand and roll into a ball. Roll the ball in the (shredded) coconut flakes and place on a baking sheet. Freeze for 10-15 minutes and then transfer the balls to a freezer bag and store.
