How to Use
Peanuts are often known as the prime ingredient in peanut butter, but they can be used for other recipes as well, such as vegan spinach and peanut pesto. In a saucepan, add 1/2 cup of water with a pinch of sugar and 8 cups of spinach leaves. Wilt the spinach on high flame for 4-5 minutes. Remove from flame and put aside. Meanwhile, roast the peanuts on medium flame for 7-8 minutes and stir to avoid burning. Remove and cool. Grind the cooled peanuts with the salt to make a fine powder. Add 6 minced garlic cloves to a pan with olive oil and sautΓ© for 1 minute before adding the wilted spinach, 1 tbsp basil, and the peanut chutney. Add freshly ground pepper. This pesto peanut sauce can be served with pasta, hot or cold.
